How do you strip the epoxy from a pickup?
  2. You don't. It's permanent. Trying to do anything to the coils will destroy them.

I managed to pick the potting off a chinese stingray MM pickup clone once to wire it for split coil. But the potting was some kind of black melty stuff you could heat with a soldering iron and pick out. People sometimes call that epoxy but it isn't. If it's real epoxy you are doomed.
