Energy from the oscilating string creates a disturbance in the magnetic field created by the magnets in the pickups.

The disturbance in the magnetic field creates a very slight electric current. The current is picked up on the wiring that is wrapped around the magnets. This coil increases the amount of current similar to the way coil in an automobile ignition does.

The current travels along wiring, through the cable and into the amp where is it amplified to a level capable of driving a loudspeaker.

Different frequencies disturb the field in different ways, thus you get different notes.

IF you want more, do a web search, there is a zillion places that explain it.
