After getting my new ampeg rig I've just been using standard patch leads to connect cabinet to head. However, I'm considering purchasing a neutrik speakon connector, but what is the quality difference? Is it worth it or should I just not bother about it?

1/4" jacks are called phone jacks for a reason! They were originally used for telephone switchboards. They were never meant to carry high current. I am pretty sure that you're okay up to about 400 watts rms output with 1/4" jacks, over that, I believe you'll get better sound with a speakon connector.

My advice on Speakons is to use them if you have them. That means, if your amp or cab has Speakon jacks on it, put them to good use! You're better off using Speakon than not using it. And they're about $3 US for each speakon connector.
