Does anyone know if the Jackson pickups have plug connections similar to the EMGs they use in some models?

EMG pickups are the only brand I know of that uses the solderless modular plugs. If they're not EMG pickups, then most likely your pickups are wired in the standard way: soldered. Take the cover off the controls and look.
