Doing a project with a MM and a J. If I wired up a set of Bartolinis in passive mode, what do I lose or gain in terms of sound?

So far I've chosen the MME and the 9J pickups.

well, all MM pickups I know of are passive - if there is anyone making an active MM I can't think of them.

If you're talking about having only passive pickups with no preamp, then obviously you lose the onboard flexibility of adjustable bass/mid/treble.

But there's still plenty of flexibility with the MM & J using vol/blend/tone. Also, I don't know about the MME wiring but you may be able to wire it up for series/parallel options. On Stingray 4's, the humbucker is wired in parallel rather than series.
