    Lower the pickups just lower than the last fret. If you still bang the strings on the pickup blades, adjust your technique.
    Don't play where you bang your fingers on the pickups- play between them, or farther up, or back.

  3. if it stops when you touch the jack, it should stop when you touch the bridge as this too should be wired to earth. if it still buzzes while you are touching the bridge, I'd suspect the bridge earth wire. if it stops when youtouch the bridge but not when you touch the strings, then you've probably got coated strings like elixirs.

    the real fix for this problem is to earth the pole pieces. in certain pickup designs that's not straight forward.

    there's a good chance that simply reversing the phase of both pickups will also help. again, depending on the pickup design this may not be straightforward.
