Recently acquired an instrument with a roasted maple neck and fretboard. The sides of the fretboard a little rigid and the fret ends are also somewhat sharp. Would it be reasonable to think I can just sand down the entire edge, to smooth it off and also knock off some of the sharp fret ends in the process?

Yes and no, maple is finished, so sanding will remove this and should be restored to seal the wood again.
Fret end dressing does not require finish removal .

I've filed them before but I usually mask off the top and sides of the fretboard on each fret before doing it. I was just considering sanding it all because of the shape of the edge of this fretboard feels a little too rigid for me. Rather have it rounded off but obviously there's no way of doing that without removing the finish. If I did do this what would be recommended to seal it again? This is a SBMM stingray so I'm not sure what finish they use. Feels satin.

Tung oil rubdown should be sufficient.
Polish the rolled over edge to 1000 grit with a firm block to really smooth it .
    Good luck.
