How to setup a 5 string to be E-A-D-G-B rather than the low b.

Also what do I do for string sets?

If you have a nut, you'll probably have to get a new one, or fill the old one up with epoxy and refile. If you have a zero fret, you just put them strings on, and maybe adjust your trussrod a little. Just buy the strings you like, that comes in a six string set. A few manufacturers make 5 string sets with high c(or in your case, b)...

I find that when most players string there 5 strings high they use a C as the first string E A D G C ,
these sets are available so you shouldn't have a problem finding them...
