I've been working with chord charts ever since I played.. never needed to use notation... but yea I got the Standing in the Shadows book and I guess I gotta brush up on my reading music, I learned the Good Bassists Do Fine Always n stuff.. but my question is... is the first G the G on the E string? or is it a lower G? or a higher G? the G line looks like it would make sense being the G on the E string but just double checking

Yup, you have it correct. The first G (or "Good," in your example) is the on the E string, 3rd fret.
