Sometimes it can be an imbellishment/orchestration to a band/artist, sometimes(like with The Beatles' "Eleanor Rigby"), it can carry the entire tune. Please try to cite examples that are not the "usual suspects"(like "E.R." or "As Tears Go By"), and please, please, please, for the love of Lennon, don't bring up ELO. Jeff Lynne squeezed the "I Am The Walrus/Glass Onion" string sound for all it was worth to dress up his tripe tunes and have a gimmick. Yeah, not a fan. But...I digress; I'll go first....

The Small Faces dug up an older tune of their's and gave it a makeover as title track for their own Sgt. Peppers(and dig the wah-wah piano)...

    Soulful and dramatic....

A dizzying arrangement by George Martin, perfect soundtrack for cruising the PCH...

As is Scatterbrain's spiritual predecessor(dig the walking bass groove, and the guitar sweep at the end)...

A luxurious arrangement with otherworldly harmonies, always reminds me of late fall and bare trees...

No, I don't have a clue as to what this song is about, yes, this is the same Scott Walker who sang "The
Sun Ain't Gonna Shine Anymore"; there's not enough space here to explain his artistic transformation over the last four decades, but it's been a fascinating journey. He just issued a collaboration with the drone/sludge band SunnO))). The "wait, what....?" factor is through the roof. Anyway, the strings here convey such a feeling of heavy sadness. You've heard of singers who could move audiences to tears
just by singing the phone book listings? Yeah, it's kinda like that....

Gotta go with another Scott, from his Sinatra on acid period, different vibe altogether...

Last but not least, I couldn't resist this little bit of late 60's MOR cheese...

There will probably be more that I'll think of, but this is enough to get started...

Given the tone of the OP I will limit my answer to the rock genre (though fwiw when I saw the thread title the first thing that came to mind was Michael Gibbs' orchestrations on Mahavishnu's Apocalypse album, or his own The Only Chrome Waterfall album)

Favorite rock tune with prominent string section is undoubtedly this:

She's Leaving Home- The Beatles and it's hard to ask people to name their favorite song then put certain strings attached? I happen to like ELO.
