Notice some times when i'm playing a note on a string that's an octave of one of the open strings, the open string will ring too. This isn't usually a problem until i move off to another note and then there's a beat between the open string and the new note. Any suggestions on how to deal with this? I guess it is by hand mutes or by having something else on the string to mute the open string resonances. What do you do?

I bet there is all kinds of sympathetic resonance going on all of the time. I wouldn't stress about it as long as you have basic muting techniques down (floating thumb certainly helps general noise reduction).
