I always ask someone I trust to check our mix from various spots in the room. I never trust the venue's soundman - often everything is fine but other times the mix is WAY off.

Get people up and onto the dance floor. Read the room, adjust the setlist, play an extra verse and chorus on songs that are working, etc. If they dance they will drink (and the venue will be happy). And if they're drinking they will dance.
