Ww2 museum. Graveyard tour.
Get drunk, if that applicable.

Head out of town to a causeway and check out the wildlife. Gators, nutria, and all kinds of cool birds to check out.
I'm not exactly sure where the one we went to was but it was off the road on the way to Baton Rouge.

Yup. There's a million alligator tours around. Just pick a reputable one.
And go to a few plantation homes. Drive up the river road and see some pretty ones.
No, no, no. Don't do a tour. We just went out there on our own.
As long as you don't act stupid, you'll be safe.

Skip the typical Quarter bars, and go all the way down to Frenchman Street. Snug Harbor, Cafe Negril, Spotted Cat - there's a ton of great clubs (with GOOD music) down there. Eat at NOLA (one of Emeril's places). Go to Villalobos and walk the dogs!
Totally agree on the Frenchman Street advice. The best weekday music is on Frenchman. Also, lots of good art and craft vendors on Frenchman.
Eat at Johnny Sanchez, that's Aaron Sanchez's restaurant.
Go to Mardi Gras World. It's where they store and construct the Mardi Gras floats.
Get a fancy haircut at Bears & Bulls Parlor.
Good shopping and an awesome Korean BBQ joint on Magazine St.
Also on Magazine St. (2200s and the 5600s, and a third location on Harrison) is District Donuts.
Hansen's Sno-Blz on Tchoupitoulas. There will be a line.

Lots of Resturants! NOLA is very nice but there is a lot of nice ones.

Music in almost every bar/restaurant, anytime of day.
Drinking on the street.
Riverboat tours/dinner.

We we go, we fly in, taxi to our hotel. For the most part, no car needed.

I 3rd Frenchman St. - little upstairs restaurant there called Adolfo's - great food - get the stuffed Flounder with Ocean sauce and as an app, the mussels.
As others have mentioned, the WWII Museum is fantastic if you like history.
Thanks for the misplaced faith in me. I rarely go to New Orleans, usually only if a visitor wants to make a day trip over there. I can't improve on what @StereoPlayer recommended. The only reason to go to Bourbon Street is to say that you did. There are many much more worthwhile things to do there.
Yeah, this is a COMPLETELY LOADED question as New Orleans is a fantastic place. I echo what others have said... and to emphasize a few...
- Jackson Square. This is more of an epicenter of the place... so great just to lay back, take in the music and peoplewatch.
- Frenchman Street. Great tunes.
- World War II museum. This is great, especially if you have an interest. If so, bank of spending three or four hours there. The Tom Hanks-narrated flick is tremendously good and worth the extra charge and wait for.
- Cafe Du Monde. Beignets are delicious and worth the wait!
- French Market. Very cool... you're likely to walk away with something.
And to add a couple of my own...
- Muriel's on Jackson Square. OUTSTANDING food... get a reservation ahead of time or eat at the bar.
- Preservation Hall. Make reservations ahead of time and do it. The show is great... you'll be glad you did it.
- St. Charles streetcar ride. These are the dark green streetcars. Take the St. Charles line out through the Garden District. It's a different flavor of the city vs. the French Quarter... very cool... and yes, like White Beard wrote, there's some good shopping and eats on Magazine Street.
- Lafayette Cemetery in the Garden District. Fun to walk around... outstanding place to snap photos.
- Pascal Manale's. Another great place to eat dinner... their signature BBQ shrimp are top-notch... as is so much food in that town!
- St. Roch Market. An eclectic food court on steroids. Cool spot just outside of the French Quarter. Take a car there.
- Hop-on/hop-off double-decker bus tour. A GREAT way to see this town and many others.
- If you're a fisherman and have a few hours, book yourself a redfish trip. It's shallow water fishing... and if you fly fish, you're sight-casting to those bad boys. You'll leave early but will be back in time for dinner.
