I've been in bands where we taped down all the cables on stage to avoid people tripping, cables getting pulled out or tangled, etc. I've been in bands where they don't. Makes setup a little easier, but the stage is more of a mess.

What do you guys do?

Nope, got some rubber thingies that have a tunnel through the middle and a split down the middle at the bottom. just route the cables through them. They lay flat on the floor looking like little rubber speed bumps with all the cables tucked up inside - takes aout 10 seconds to put the cables in, even less to get them out

I have no idea what they're called especially after a bottle of Merlot

If we're doing a full night pretty much everything but instrument cables get taped down--except for a long run to my amp at this one place where my pedalboard is by the mic at the front of a stage. It's awkward to explain.

We figure an extra 5 mins to tear down at the end of the night is worth it to totally idiot/drunk-proof the stage.

If we're doing a 45 minute showcase gig we obviously don't bother.

I'm with fenderx55 as far as delination may go. If its one set, then probably not. But a full night of a couple breaks and people walking around, then I may.
Tape is cheap and usually can go where needed. If there is extra setup time, more tape may come off the roll for neatness and whatnot.

But if the setup is quick and the set is short (or even long) there may not be much tape involved. You can bunch chords in spots without tape and that can work too.

As a bass player, I follow the above. If I'm running sound, I tape everything I can.
Follow the two rules: If it moves and shoudn't: duct tape. If it shoud move and doesn't: WD-40.

For Corporate gigs - yes. (Organisers notice little things like that and it helps to get re-bookings, I tend to find that most of them want to band to play slick AND look slick - this usually also means the stage presentation.)
Pub gigs - only if it is a "traffic area"
