try ctrl+p then under "Audio I/0" go to channels and and set it to "2 (Stereo)". Then you will be recording in stereo. Also, when you create a new track make sure you're creating a "stereo" one, not just a "audio" one. I hoped that helped and that I'm not completely misunderstanding...
