1 vs 2 sets of pickups

This wasn't something I found to be covered in the MM pickups sticky, but it is about a MM. I tested out a model of stingray with a single set of pickups and it sounds great, but there is a version offered with 2 sets of pickups. My question is - what difference in tone and functionality will I find in having that second set of pickups? Apologies for the newbie question.
