I see old busted 810s floating around pretty often. Wondering how hard it would be to rework it into a 215?

Anyone ever converted an old 810 enclosure to a 215?

Sounds like a waste. Building two TL-606s with 3015s would be lighter and smaller.
Remember these fridges weigh well upwards of 100 lbs, whereas a TL-606/3015 can be made in the 45-50 lb range.

there's just no guarantee it would be tuned right. An awful lot of effort for potentially poor result.
...But, if you have the Ampeg box and want to do it, it can be done.
You'll obviously need to swap out the entire baffle board and make a new one for the 15's, and the 810 is divided into 4 2x10 chambers, so you'll need to remove two of the chamber dividers. Then you'll need to calculate the internal volume of the resulting chambers and find an optimal driver for that volume. Then figure out what size port you want for the driver and volume you are using.
If you decided to make it all one chamber, I suggest keeping the middle chamber dividing board in, and cutting a large hole in it so you still have internal bracing on the cabinet.
Also, if you do decide to do this, you may want and/or need to add internal bracing to reinforce the areas that were weakened when you removed the other chamber dividers.
Sounds like a fun project. I wouldn't spend more than $50-$100 for a salvaged Ampeg box, though.
Also, you might not really like what you end up with, as the depth of those cabinets doesn't necessarily lend itself to low bass. Be prepared for a mid monster.

If you know what you're doing, piece of cake. If you don't not so much, and if you have to ask the question, you don't, so probably not worthwhile. Much easier to buy a used 215.
Meh, could be a fun learning project. Not like I'm ready to start work or anything.
Just a matter of woodworking. Not sure how the baffle board is attached on the 810, but you'd want to replace that with a new one with holes cut for the 15" speakers and the 4 ports (assuming you're making it the same as the SLM 2x15's). You'd also need to remove the internal top and bottom shelves in the 810, so that you only have one remaining to divide the cabinet into two compartments. If you do ever get around to the project - let me know and I'll take all the measurements off of mine for you.
