The only things that come to mind are Quicktime Player 7 Pro and Band-in-a-box. Quicktime let's you slow down audio files while retaining pitch so you can practice passages. BIAB can construct changes for you to play over and provide MIDI backing tracks based on those changes.
I just switched to a Mac myself. Still learning my way around it. Garage Band is pretty cool. You might find some use for that.
Another thing, not specific to Macs, is the webcam. Recording yourself playing short passages and then watching and listening to the results can be instructive. You might be surprised at what you notice. I've found that the sync between the audio and video is good but not perfect... you might also want to go into the options on Photo Booth and flip the pic around before recording (otherwise it looks like you're playing with hands switched).

I did some keyboard and horns with midi, too. A small chunk (the bridge) uses horns from a garage band demo.
In any case, the bass is all me, and was a great exercise in the style for me. Garage Band comes with your mac.

I've also heard the version of OS X is going to be even more like iOS in look and feel.
