I need some advice from the collective....

I have 2 GK Neo 115's
I also have a DIY 210 cab with 2 Eminence s2010's (I'll check the dimensions)

I hate all of my cabs because of their size. I mostly play coffee shops and the like with a "big gig" every once in a while.

I'm looking for a tiny cab that can deliver. I like my tone with lots of mids and lots of grind. Any suggestions for building a new 210 or maybe something else? I feel a little overwhelmed as far as what to do becuase most of the cabs I see are pushing for larger box volumes

Proper box size for the speaker is a requirement for good sound. Maybe you should look into a 112 or 110 cab for your small gigs?

Agreed.

Seeing as you can use your 15's to cover gigs while you're sorting this out, I'd start by doing a little 110 with one of your basslites. That should cover little intimate, coffeehouse type stuff and anything you do with other acoustic instruments.

Something along these lines.

Tweeter mods in there too, can build the box or buy it.

You can stuff a 12" Deltalite in as little as 1-3/4 cubic feet and not lose any important lows. They have enoigh upper mids going on you can get a pretty clear, detailed sound without a tweeter, bit they're $150 or so.

Was saying do a Basslite 110 because you already have the most expensive piece, can be even smaller (1 cu.ft.), and would cover most any coffeehouse type deal. Could maybe even saw your 210 in half and make 2 of them.

That will work nicely. I've been using an S2010 in an old EA Cxl110 cab (which is a bit less than 1 cu. ft.) where the original driver's voice coil leads came loose and rattled. Since I couldn't get a new driver, I checked for a suitable 10 in replacement driver and settled on the S2010 as its T/S parameters were good for a small cab and testing verified that. The high end rolls off smoothly after 3.5 or 4 kHz. The cab has worked well and is capable of substantial output without distortion. Although I don't use it with a 5-string. The driver just isn't able to move sufficient air, and the response falls off noticeably. But with 4-string, its worked just fine over the past 2 1/2 years.
