In practical terms, what kind of extra work does a co-principle do, in comparison to a rank-and-file player?

Makes sure the section is doing what the principal wants, and takes the lead on the bottom line if the section is divided. Effectively, the principal's job is about coordinating with the rest of the orchestra and the subprincipal's job is about keeping the section together.

In my orchestra the assistant's job is to fill in for the principal when they are absent. And to turn his pages, usually just late enough to be annoying.

In a more serious vein, there is a difference between a co-principal and an assistant principal. Co- is equal (not very common) bit not the assist.

In my case it's to make sure the principal doesn't get bogged down by stupid questions from the rank and file, rather like a firewall. Turning pages is inside desk, Nos. 4,6&8 don't get paid extra for it! Penciling in bowings and making sure they are passed to the R&F, having a spare bow and set of strings is also a courtesy part of the job.
Generally helping with running the section and letting the principal work with the other princiapls and conductor is in there too.
Supporting the principals choices about bowing and note length etc. can lead to good section behaviour. Often the R&F have some good ideas and it is your job to suggest these to the principal if you think they can help and give credit where it's due. You should praise the teamwork and stamp out quibbles in the section.
