Consensus on power supplies - best bang for buck?

I've been ok with a single boss PSA adapter for years, with anything from 2 to 10 pedals. Max current is 200mA.

€20 so pretty good "bang for buck" and no need to fit it into or under the pedalboard.

Naturally requires all pedals to be 9v, correct polarity, which is happens all but my Jen Wah are, so I use a battery in that.

The Cioks DC5 has 5 isolated outputs:

Total output current = 900mA.

It’s small enough to fit under a Pedaltrain Nano, Nano+, Mini or Metro 16/20/24 board without having to alter/mod the board*.
It uses a high efficiency toroidal transformer and is very quiet.
I’ve had zero issues with my DC5 and can hear no hums, buzzes or high-pitched whines even when going through a very good sound system using headphones.

* To fasten the DC5 to the underside of a pedalboard, Cioks advises securing the DC5 to the board with screws and provides screw mounting holes on the reverse side of the unit. This means you will need to drill 2 small holes into the rails of your board. Alternately, you can use either high quality hook and loop material, such as 3M Dual Lock, or zip ties to hold the DC5 underneath your board.

How do you control whether the outputs feed 9v or 12v?

You use the dip switches on the top of the unit. Lo = 9, Hi = 12 (18 on the 3rd channel)
