Expression pedal utter confusion

Hello fellows! I'm in bit of a noob-y pickle atm. I recently acquired two amazing fuzz pedals; the Sovtek Deluxe Big Muff Pi by EHX and the Disorder (Abuzz) Fuzz by Dreadbox. Both amazing pedals and both with an expression pedal in! I know that one of them (reckon it was the disorder fuzz) had a note in the manual about the expression pedal needing to be 1-5 volts (?). I, honestly, don't know jack about jack when it comes to this.

I searched through the threads about this and it seems that people have had problems getting the exp. pedal to work. I thought an expression pedal was merely a plug-in of like volume/EQ and nothing that 'bothered' the signal (???).

I have convinced my wife to let me buy an expression pedal that works for both of them, budget is kinda tight, and there's pedals out for like 20€ on amazon and what-not! But also I see some go for like 100€ or more? Am I missing something?
