Favorite Recipes Thread

This is great while watching a Packer game or any other football game

Pour in a microwaveable container:

1 medium jar of mild, medium or hot salsa;
1 package velveeta cheese
1 can Hormel chili no beans (turkey chili OK)

Microwave on 75% power, removing at 1 minute intervals to stir. SHould be ready in about 5-7 minutes.

Serve with tortilla chips and cut up jalapenos.
 
I have one we've never named. I call them 'Chicken Thingies', as in "I think I'll make those chicken...thingies tonight."

You'll need:

Chicken, any boneless, skinless pieces will do.
Bacon
Jalapenos, just the green 'meat' parts-as in remove all seeds and the little white 'rib-thing' inside.
Fajita seasoning, a mix is fine

and for the rest:

Long Grain and Wild Rice, Zatarains make the best kind.
Campbell's Cream of Chicken and Herbs Soup, one can per box of rice

Preheat oven to 350 F.
Butterfly the chicken. Beat it thin if you like. It works either way.
Sprinkle fajita seasons all over the chicken.
Place Jalapeno meat inside.
Roll chicken around jalapeno.
Wrap bacon around chicken
Repeat till you run out.
Place bacon wrapped chicken thingies in covered dish and bake till chicken is mostly done all the way through,( usually about 15 min)
Remove chicken from covered dish and put back in oven on broiler pan, or some other 'screen suspended over a shallow pan' object. I actually use a grilling screen over a deep cookie sheet
Turn thingies after five minutes. Cook till bacon is crispy

While that is happening:

Prepare Long Grain and Wild Rice per package instruutions.
When it is almost done, Dump the Cream of Chinken and Herbs soup into the rice. Don't add water. You don't want soup. You want flavored rice.

Serve Chicken Thingies on top of flavored rice. we call it 'Wilder Rice'.
 
And the leftover chicken thingies figure prominently in the greatest sandwich ever made:

Honey Wheatberry bread, toasted with sharp cheddar cheese on it.
Baby spinach leaves, in stead of lettuce.
Thinly sliced red onion
Roma tomato
slices of chicken thingie.
Pesto Mayo.
Honey Wheatberry bread toasted with Monterrey Jack cheese on it.

Place in hot pan. Place teapot with at least a quart of water on it on top of sandwich. Let it grill for a minute or two, then flip the sandwich and put the teapot back and grill that side.

My only shark encounter was a truly deluded little feller while diving in Florida. This guy was maybe as much as two and a half feet long but he decided my thigh was a fish and apparently thought "I bet I can take this guy." He bit me but was too small to actually take a chunk out of my leg. So it was really more like being pinched on a large scale. I swatted him away and really kind of think that most of the damage I got on my leg came from that. I ended up with just a few scrapes, but they were enough to bleed slightly. And then it ocurred to me that I was swimming in waters that also included MUCH more serious sharks...and I was bleeding. So I got out of the water and got on the shuttlebus back to the pier. I was tired so I fell asleep on the shuttlebus. My trunks were still slightly wet and I think the salt water dripping off my trunks made the slight bleeding look like it was more serious, because I woke up on the shuttlebus with freaked out people going "Are you all right man? Do you need an ambulance?" I declined treatment. But when I was explaining what had happened to my leg the shark got much bigger and more impressive.

Yeah, but it was embarassing to even think about admitting that what had bitten me was a puny little bitty shark with delusions of grandeur. This thing kind of got stuck on my leg. He couldn't even close his mouth. I don't know if that means he opened his mouth too far, or human meat is just tougher than fish.

It's like being in a car wreck and telling people that a SUV sideswiped you, so you don't have to admit the damage was from a Mini Cooper.

By the time I was back on the Carrier the shark was either a Tiger Shark, or a Mako. And it was at least seven feet. Because, hey, that makes a better story.

The real one wasn't much worse than being bit by a catfish. And I've caught catfish bigger than him, too.
 
Here's an awesome burger recipe... Mix about equal parts of feta cheese, chopped basil, and sundried tomato in a bowl. Make half of a hamburger patty, put the feta tomato basil mixture in the middle of the burger, and put the other half of the patty on top... I usually put some salt and pepper on it. Cook 'em up. While they're cooking I put some prescuitto?? In a pan and sautee w/ olive oil then cut it into thin strips. Take the burger off, preferably put on a good bun or roll. Put the prescuitto on the burger and enjoy, it's really good.

I don't remember where I heard this, but Puttanesca sauce is the name given to the sauce that the *ahem* "ladies of the night" used to make for the sailors when they came to port. The italian word for "wh*re" is actually in the name of the sauce. That, I know because my grandmother used to call certain women by that name in anger.
