Just put a set of Fender flatwound strings on my Epi T Bird and the string sleeves (don't know if that's what it's called) get over the sadles like in the picture. Is this suposed to be this way or should i do anything about it? Thanks

Yikes! No, the silks should not come over the bridge saddles like that. You can cut them off with box cutter with a fresh razor blade. Be careful. You will have to re-intonate at the very least, if not a complete from scratch set-up.

Thats a pretty common issue with the Gibson 3 point bridge. I it intonates and sounds ok it should be fine, but it more than likely won't. Their is a device called the Mod Bar that you can find on ebay for about 30.00 that will pull the strings back a bit and get the silks off the bridge saddles. It also has a little bit of weight to it and can help a bit with neck dive unless its really severe. Some say it increases sustain, but your Tbird has a ton of that already, or at least mine did.
