it will make pretty much anything sound good.....I see it commonly paired with the hartke metal coned 4x10 cabs.
If you buy a 4Ω cabinet you are done. You cannot add anything more to the amp. Getting an 8Ω cabinet means that you can add another down the road.
Actually, an 800RB has two separate power amps.
One is 300w @ 4Ω
The other is 100w @ 8Ω
A 4 ohm 2x10 is not a good choice. I'd be looking at 4x10's at the very least, if you want any real volume. More/bigger is always better. Personally, I like a good 2x15 or 2x12.
For my tastes a 2-15 (4 ohm) cab for the 300 watt section, then add a 1-15 (8 ohm, same driver as the 2-15) to the 100 watt section for outdoors.
Can do the same with 12s, or go for a nice 4 or 6-10, then add an 8 ohm 2-10 to the 100 watt section.

Good strategies for full-range operation. In bi-amp mode, a 4 ohm 212 or 215 could be paired with an 8 ohm midrange cab/driver.
Probably, if your 410 is 4 ohms, and the 210 is 8 ohms. You can't run the 100w side under 8 ohms.
I've done that as well, but using a Bose 802 Panaray for the top end on 2-15s. Very nice mids/highs dispersion but for my money I prefer just running the same size/make drivers on full range and call it day.
Again, using the 100 watt section only if I need some more cabinetry for outdoors, otherwise any good 4/6/8-10, 2/4-12 or 2-15 through just the 300 watt section is usually more than enough, it's a very powerful amp
I've got that amp and I've always just run a 4 ohm 215 off the 300 watt side. But sometimes its much more than I want to schlep, and while it's never been too little, hypothetically it would be very cool to add another 8 ohm 15 on the 100 watt side. 
Being that it's your money, I would suggest you find 3 cabs you like the sound of, all of them 8 ohm 15's, then run 1 off the 300 watt side when you're just practicing at home, 2 off the 300 watt side when you've got a full band rehearsal, and all 3 when you're on stage, 2 off the 300 watt side and 1 off the 100 watt side, just because "who else runs three 15's these days?".
