Is it possible for Audacity to split a stereo track into two mono tracks?

yes. i know its possible as ive done it, but i deleted the program and cant remember how. i found it from looking around, you should be able to

To the left of the track, where the title is and the sampling rate, and the mute and solo buttons... click the top bar where the title is... a menu drops down. Split stereo track is towards the bottom.
