My main bass is a 70's Gibson Grabber, but due to it's age and condition I'm using another bass for live purposes. It's a Mexican Fender Jazz. I'm trying to figure out what pickups I could put in the Jazz to approximate sound of the Grabber. I'm ideally looking for something already in the Jazz configuration/construction.

Jazz Bass replacement pickups for a Grabber sound

Two problems are that the Grabber has a humbucker, and it's in a different location than a Jazz bass.
Well, I was figuring I'd probably put the replacement in the neck position. But it's good to know I should look for a humbucker.
Well if your Grabber is that one that you can change the pickup position by "grabbing" it, hence the name 
then I guess the pickup position is something like a P or a '51 P pickup position.
Not much to do regarding the pickup location on your Jazz, unless you want to re-route it, but yes, you should look for a humbucker to put in that position.
Usually Jazz-style humbuckers are stacks, which means it has a coil on top of the other, or they have a pair of coils, one for each pair of strings.
You can look for Nordstrand, Bartolini, DiMarzio, Delano, Seymour Duncan Basslines (Hot Stack), and some others...
