One huge way to add variety and spice into these gigs is if one of you can sing. Vocals offers up a lot of options in a trio. It also breaks the monotony of hearing a guitar play lead all night.

At least in coffee shops, the clientelle turns over every 25 minutes. I've played some restaurants, and there, you a REALLY background. Prepare to play quietly, and just loop Autumn Leaves for three hours.
The coffee shop will be more fun, you can interact with the audience.

Pick songs that feature each instrument. Take a few songs with very prominent basslines (Night in Tunesia) and start with just you and drummer. Things like that. And yes, you have to solo.
