Double Bass Organ pedal notes on music.

On some sheet music, there are small bass clef notes that are meant for organ pedals.

Are these good notes for a bass player to play?

Or is it better to stick to playing the root on 1 and playing around the chords like normal.

I'm playing bluegrass/gospel music.

If you're playing gospel organ music, then give the organ bass line a go and play it note for note. Hear what it sounds like, and adjust the register as needed to fall nicely on your bass range.
