pick up and pot suggestions

I'm building a unique upright electric 5 string bass out of a slab of 400 year old walnut. I've got everything laid out nicely but am confused as to what kind of pick up I want to use and what range vol and tone pots to use.
I leaning towards a humbucker but don't know how to determine the values of the pots. Can anyone make any suggestions?
 
Perhaps also describe the string layout. The strings and setup of my EUB is just like a traditional double bass, so regular magnetic pickups don't really work both physically and tonally. I ended up building and winding a specific pickup for the job and mounting it to the end of the fingerboard. I use it blended with an under bridge piezo through an on-board active preamp/mixer.
