Pulled Pork...... Indoors!

Brinkman smokers are about $40 at Academy sports, Walmart, or Lowes. It's the best $40 you'll ever spend. With one of them you'll get some crispy bark on whatever you are smoking and have an excuse to sit around and drink beer as you add water and wood to the smoker.

I use a pork butt or shoulder in the crock pot with

Half white vinegar
Half apple cider vinegar
Salt, Pepper, Cumin, Paprika, etc
an onion
a bell pepper
hot pepper (usually a few jalapenos)

Once the pork starts to fall apart I pull it out and shred it into a baking pan. Then I put it in the oven to get the crispy edges and to pull out some of the vinegar. The best coastal Carolina BBQ I have ever had outside the Carolinas.

I was hoping to find a Carolina pulled pork recipe and this sounds reasonably easy and mighty tasty. Thanks.

Does anyone know if the preparation is any different for a Piedmont-style pulled pork? I went to graduate school at UNC and fell in love with the pulled pork there - there is a decent version at one of the BBQ places around here (Blue Ribbon in West Newton) but most use the heavier tomato-based BBQ sauce - not the vinegar-based.

I don't really know if this is exactly the same but my buddy from Coastal South Carolina taught me to do this one and he went to UNC as well. I have to say this reminded me a lot of Time-Out's pulled pork which I suppose may be a good or bad thing depending on your position on that place (I still dream about those cheddar chicken biscuits).
