Recommend me some latin

I think I may have taken a liking to latin music (I realise that's a pretty broad term), so I've decided to check out some to see if that's the case. The problem is, though, that I have absolutely no idea where to start.
So if anyone could give me some recommendations on some good latin music (trying to stay clear of the pop versions like Jennifer Lopez), that would be great.

For some classic stuff, try singers like Beny Moré and Celia Cruz, and the bands led by Xavier Cugat, Pérez Prado, Tito Puente and Machito. A more recent band with a jazzier style has been Irakere.
