Slow cooked beef brisket yum

I'm in the process of marinading this lovely cut of beef, in cumin, smoked paprika, salt, pepper, rosemary, oregano, light brown sugar, lemon juice, a splash of red wine, and olive oil.

Gunna brown it off tonight and cook low and slow til tomorrow morning :D

And add veg to it and cook til afternoon

What time should I arrive? I'll bring a bottle of red, Do you have a preference? :cool:

What does it do? (assuming it's not just adding taste of coffee).

Good question. I'm not certain, but a chef told me to try it once. I marinate the pork in soy and a cold espresso shot overnight and it imparts some tiny intangible richness. It definitely doesn't taste like coffee, just adds some complexity. I honestly can't remember if there was some advanced chemistry involved, or if it was just something he watched his grandmother do.
