Saw a bit of the drum & bass one - it would help greatly if the volume on that was more balanced; with the voice maybe a lot louder because I have to turn the volume up and down to hear it...

An instrument isn't built with strings attached. It begins it's life unstrung. Won't hurt a thing.

if you were to cut all 5 strings at once then that could possibly cause some shock to the neck but with unwinding each string one at a time and then taking them off there is no damage/shock to the neck at all.

Took me a while too. It's in the video where he talks about removing neck gunk. He touches on it there.
