This was done near the end of last year do to some completely changing their post later that day, a few days after or even a few weeks out because they did not like where it went as it was. (wrong side of the debate)

I agree. My wife uses a meat thermometer to judge done-ness. 160*F is considered safe and not supposed to turn the meat into balsa wood. She cooks it a hair under that to make sure it does not dry out.
