I just recently bought my first “real” maple syrup. It can be expensive… it’s got a lot of flavor and yes… it’s on the thin side, but I wasn’t sure if it comes in a different viscosity. What a sugar buzz though!
back to the regular scheduled program.

I love maple syrup. There is a farm locally that runs like its the early 1800s and they make it in an old school kettle. It gets a slightly Carmel and smokey note to it from the wood fire... the stuff is amazing.
If it goes much heavier than standard, it starts to crystallize, so other than moving on to a product like maple cream (which is tiny sugar crystals in sauce, basically) you don't get thicker. Well, there's maple glass, too - properly made traditionally by tossing stuff cooked up to sugar temps onto clean snow so it freezes before it can crystalize.
Keep it in the fridge! You'll never have to turn to ~shudder~ cane syrup again.
Also I think we have to stop encouraging @instrumentalist as he keeps cluttering up our pancakes n' maple syrup thread with his Explorer build.

I grew up sap sucking and boiling. I'm happy to let all you Canadians think they have a monopoly on good syrup but they ain't got nothing on New York syrup.
Also - @instrumentalist - if it makes you feel any better, on my two buildoff basses, one of them is dead centered to the glue line and the other one is off by more than yours!
