It really depends by the type of wood, for instance, basswood and poplar ALWAYS look bad in natural. Alder is nothing special, so "normal" maple and ash if it's not bookmatched properly. And as you pointed out there are very attractive woods that sound dead.

If you don't like the sound fo the pickups you can replace them and I'm pretty sure that the P5 will remain a P5, and I agree, "modern" pickups tend to have more output, but the Fender sound is not just low output...
