If it's one of the standard 3 way slider switches used in Fenders, with 8 contacts total, like
this one, then the answer is definitely yes. You'll only need half the switch, i.e. one column of 4 terminals.
Your humbucker needs to have 3 or 4 wires (plus a bare shield, usually). If it's a standard humbucker with a 4 wire cable, the 4 wires are essentially two pairs, one for each coil, with a wire at each end of each coil. For this setup, you can basically think of the humbucker as having a top (end of one coil), middle (the starts of both coils, tied together), and bottom (end of the second coil). Top gets wired to hot, bottom to ground. The "middle" gets wired to both of the center-most two terminals. Hot gets wired to one of the outer terminals and ground to the other.
This way, when you have the switch in the middle position, the pickup will work like a normal humbucker. When you move the switch to either of the outside two positions, you're connecting the "middle" to either the top or bottom of the pickup, which shorts out one of the coils and leaves the other in circuit. That gives the desired one coil - humbucker - other coil function for the switch.
If you want to do this with two pickups on the same switch, you can just use one set of 4 terminals for each pickup.
