I've got piezos in my hollowbody Curbow, and I've found the same thing--they just don't seem all that useful.
But listening to the video and comparing it to my Curbow (which has a deep fully hollow mahogany body, though not as deep as yours!), they both seem to share a wonderful sort of articulation and note separation, and I wonder if that's a function of the kind of modern "hybrid" hollowbody construction with reinforced neck and high-mass bridge....

The piezo is active the magnetics are passive. I won't say never but I haven't yet found the piezo to be super useful the pickups do it all. The soundcloud or YouTube videos are all passive mags.
