A question on wattage NOT impedance

Normally, you would want your cab to be able to handle twice the power of your amp, to allow for peaks. Running them right to the max could be a disaster, unless you have some restraint with the volume control, and then why both with the larger amp?

Also - you won't hear the difference between the 2 amps. In general, you need up to 10x the power to sound twice as loud to the ear. (perceived loudness). So stay safe.

Had a watch of Juan Alderete's Rig Rundown when he was using PFs with Mars Volta a few years ago. He had two heads, each paired up with a 115 and a 210 on top. I think this combination or two 115s will be the way I go... Maybe... Too much choice!

Your experience with your head powering the 8x10 is Ampeg error. The head should have never gone into protect without extenuating circumstances, like a 100° day. It's stuffed. This happened a lot with pf500 amps until they revised it and rerevised almost ad infinitum for literally years.

Early micro CL had noise issues with dual AV210 cabs, that was rectified relatively quickly.
