This is the origin of the statement and it does have merit, regardless of ruffled feathers within this thread.

Any pickup that listens to the strings at two points has upper mid dips (which are at a different frequency on every string). Pickups that listen at only one point do not have those dips, so they will always have more articulation. And no, since the dips are different on every string, you can't fix them with eq.
