My starting point is downloading the lyrics and chords and spacing them to match a 4 bar per line format. Then I add them into my Excel template, and edit as required. I can do a quick and dirty sheet on a ZZ Top song in 10 minutes. Footloose took at least 2 hrs, because the vocals and format were complicated and it had one complicated bass and two gtr lines.

I do the same for quick and dirty jobs with simple songs.
If I am doing note per note transcribing, I want to use excel to line up bars with elapsed time on video to avoid screw ups. I write my transcriptions on paper with 4 column/line format
My most recent "Aha" was when I discovered that the subtleties of my plucking hand have fore more impact on my tone than my fretting hand.
