I Just can't find the complete version of all the things you are by Bill Evans. It seems to be that the only one available is the one that suddenly stops at the bass solo.

I found two versions of "All The Things You Are" in The Complete Riverside Recordings box set:
Disc 11, Track 1: Solo piano, 9:07
Disc 11, Track 8: with Chuck Israels (bass) and Larry Bunker (drums), 8:48

Is the second one among those that you've already found?

They do it on Intuition, funky w/ Rhodes.

There's a medley on Alone where he goes into Midnight Mood, I believe. A few really good choruses, still. It's a bonus track.

The Complete Riverside stuff mentioned above is good too.
