So I purchased a GK Neo 1x15 and a GK Neo 4x10 ... and I'm really undecided on what kind of amp head to use to power these 2 cabinets. My initial thought was a GK1001rb ll but now I don't know ... I'm old school and I love the Fender Bassman and the Ampeg V4 need some pro advice

Curveball time. If you are anywhere near a Mesa dealer, try out a TT800. I had my doubts about how "old school" it would get. It totally gets there. (I gotta post some recordings when I get a sec!)
Plus, it weighs just about nothing. It's brand new and will come with a warranty (and the best customer service in the business). AND you get the bonus of the Subway channel, which will get a little gooey with adjustments, but lives naturally in a more clean environment. Two sounds in one amp!

If you can handle the weight, albeit 20lbs, give or take less than an SVT, you can't go wrong with a Super Bassman, imho.
I haven't used mine with those cabs tho, but, it has sounded great with every cab I've used it with
