I haven't played on GT-6B, I have played on a GT-10B though. I am kind of so-so about it, some really good effects, some blah. Kind of like Boss pedals, there are a few jewels, a lot that can get the job done, and some stuff that I Hate. I don't honestly know how the pitch shifting is in the GT-6B, I would imagine pretty good though because Boss has some pretty good pitch shifting pedals.

True of any multi that has ever been made and will ever be made.

I will speak from a GT-10b perspective. If you like tweaking (and all the time that is involved) than the Boss GT-6b (or 10b) is for you. If not, probably look elsewhere.

My needs were pretty simple (delay, reverb, sub-octave, and eq) but I love having everything else to mess around with and see if I like it (aka chorus, flanger, etc).

can't speak for the B3.

I'm ok with tweaking, and learning a new interface. I'm a software engineer in my day job, so I'm good with the technology. This doesn't mean I won't be stumped by some poorly translated manual. Get's us all from time to time.
I just found a used Boss GT-6B, and will be checking it out tomorrow. Sort of an un-expected turn of events today as I was fully expecting to jump on the Zoom B3 ship.
