Chili night

I did too.

And I had it again today in quesasillas. Chili is an event in my house. We don't kid around with it. My son got back from Italy yesterday and said he had been craving chili for a week. His flight got in around lunchtime, so I had time to make a batch and it was done around 9:00 PM, or 2100.

There was a thread with chili recipes some time back, but I will summarize.

The Roy family chili recipe starts as a double batch of Wick Fowlers Chili Mix. The packages are intended to make 2-alarm chili. But That's just not seriuos enough. And it originally asks for ground beef only. That's kind of dull. So I used 2 lbs of ground beef, 2 lbs of stew meat, and 1 lb of chorizo. After the meats have browned, drain them under pressure, because chorizo, while very flavorful, produces a huge amount of grease. Then add the stuff in the mix, plus a bit of fine-ground cayenne to taste. I add about another tablespoon. That doesn't sound like much. But it's on top of what most people would call a hot batch anyway, and it's more than it sounds like.This is also when I add the diced bell peppers and onions. After the peppers and onions are soft, then I add crushed stewed tomatoes and 2 cans each dark red kidney beans and black beans. I know that traditional Texas chili doesn't include beans, but mine does because it drags out the batch for longer, so we can eat chili for days.

Serve with flour tortillas, garnish with grated sharp cheddar cheese. Fritos are optional.
