My experience with compressors over the years is: the simpler, the better....this is why Ive used a half-rack dbx 163x for decades: One slider........With that said, TC Electronics makes a pedal called the SpectraComp. It has one knob. Looking forward to trying one out
 
If rack mount is an option and size / weight not a concern I’d look at the Warm Audio clones of 1176 or LA2A. Have not used them but have heard they are very good. At a lower price point Klark Technik looks interesting
