It depends... For my own stuff usually one track at a time. Some times two(bass and drums) For our band, we always track rhythm section (bass drums guitar keys) live, then overdub vocals and solos, etc.

As for live-tracking, I recently was going through my Frank Black and the Catholics CD's, a lot of which was recorded/mixed live to two track in the studio (Pistolero, Dog in the Sand, etc.) - terrific and inspiring.

A live performance and a studio recording are two different things. You will never recreate or capture the experience of hearing a band performing live on stage. And I think a lot of people don't really expect to have that experience when listening to a recording at home or in their car.
As well as a live band should really dive into the live experience and not rely too heavily on samples etc., you should dive into the strengths of the studio when recording. Get your parts right. Really work on the arrangements. Get the instruments to intentionally compliment each other. And most of all: Don't use some mystification of "vibe" or "magic of the moment" as an excuse for lazyness and not putting in the work.

"Putting in the work" comes way before you enter the studio. It's not a mystery it's synergy the resulting creation is a combined effect and is far greater than the sum of their separate parts, that's real and it is the "magic of the moment".
