Dream Band

Vocals - Elvis Costello. He can do rock, ballads, R&B and country with equal skill.

Rhythm Guitar - Steve Cropper. The most tasteful guitar god of all time.

Lead Guitar - Jeff Beck, circa Jeff Beck Group V1. He remains to me the most exciting conventional lead guitarist of all time, based on his 60s work.

Bass Guitar - Pino Palladino. The man.

Piano/Keyboards - Steve Nieve. The Mad Scientist. Equally adept at piano, synth, organ, theremin and a thousand other things. Plus he's a genius.

Drums - Steve Jordan. My favourite drummer of all time. Can make the most basic, straight groove feel funky and dynamic as hell.

I could do a hundred different variations on that lineup, with Pete Thomas on drums, or Willie Weeks on bass, or Keith Richards on Rythm Guit or Nicky Hopkins on Piano, etc. but that's the one I'd most like to see.

Of course, I think there's a couple of dream bands of mine already out there: Elvis Costello and the Attractions is one. Not a single weak link in the chain.
 
Tough choices....but i'd say:

vocals - Anthony Kiedis of Red Hot Chili Peppers
lead guitar - Eric Clapton(in his Cream years)
rhythm guitar - Dexter Holland of the Offspring
bass - Alex Katunich of Incubus or Geezer Butler of Black Sabbath
drums - John Bonham of Led Zeppelin
piano/keyboard - Ray Manzarek of the Doors
 
I'll swap piano for a third guitarist:

Vocals: Bruce Dickinson
Guitar 1: Dave Murray
Guitar 2: Paul Quinn
Guitar 3: Randy Rhoads
Bass: Steve Harris
Drums: Dave Lombardo

That'd be some epic blues metal, with thunderous galloping (from drums and bass), a trio of guitarists who I reckon would sound great together, and the greatest singer ever (just ahead of Ian Gillan).

Bass- Cliff Burton, Metallica
Drums- Dave Lombardo, Slayer

For rock-

Rhythm/Lead Guitar- Tom Morello, Rage Against the Machine
Bass- John Entwistle, The Who

Drums: John Bonham, Led Zepplin
Piano: Paul Schaffer from Late Night, the dude has it all, except hair.
