Essential steps for a perfect grilled cheese

I think the butter vs mayo debate remains unresolved.

where's that vomit emoticon...i remember the first time i took a bite of a grilled cheese with mayo in it at a friend's house in high school...i had no idea anyone would do such a thing, so it caught me so off guard i had to really work to politely finish it

i later had to break my wife of this disgusting habit, at least in front of myself and the children

butter goes on the outside, for crispness, nothing but cheese inside, mayo goes in the refrigerator where it sits waiting for turkey sandwiches--no debate here

Ok, I can accept some herbs or even a little splach of sauce, but no meat or veggies. Various/multiple types of cheese are acceptable and encouraged. Like when I dust the outside of the gc with parm.

Since you're in the So Cal area, I know you'll be able to find it - Clearman's Cheese Butter (I find it the cheese section at my local Vons). A layer of this stuff instead of regular butter kicks the GC up a couple of notches. Crispy-cheesy outside / gooey-cheesy inside...nom, nom, nom.
